The Landmark Hotel Shenzhen boasts a world-class Italian restaurant,
Prego. Here, in light, airy surroundings, with a bar specialising in
fine wines and flavoured grappas, diners can enjoy the best of
celebrated Italian chef Marco Maggio’s authentic style of cooking.
A native of Brindisi, southern Italy, Marco’s individual style
became a byword for excellence in Mediterranean food during his
tenure at Hong Kong’s Aqua Roma and Tokyo Restaurant. His modern,
lighter, cooking style was as popular with expatriates as local
diners, who appreciated his innovative approach to Italian cuisine.
Specialising in his own brand of classic yet modern food, he puts
his signature twist on the best and freshest seafood and homemade
pasta.
“My food is light, so people can try up to 12 dishes on my
tasting menu and really get an experience of Italian food,” he says.
Rather than having set signature dishes, he prefers diners at the
60-seat Prego to trust him with their choice of food. “If they are
willing, I don’t let them look at the menu in Prego, I advise them
what to have,” he says.
Following local preferences in Shenzhen, he focuses on the
freshest seafood and pasta, combined with the lightest of sauces
and, with a live fish tank in the kitchen, diners can be sure that
his favourite Cod Lasagna flavoured with Raisins, Carrots & Celery
will satisfy even new converts to Italian food.
“I like people to try my tasting menu,’ he explains. “My portions
are light and I don’t use cream, so they will be sure to love the
food, but get up from the table feeling comfortable.” Special
favourites include Spaghetti with Fresh Prawns, Basil & Pesto; and
Garoupa & Turbot dressed with Vegetables & Pesto. Fresh basil and
mint are top of his herb list.
When it comes to desserts, Marco satisfies Italian food lovers
with his superb traditional Italian delights such as panacotta,
bavarois and tiramisu. |
