Brisbane is hosting two chefs from
Sofitel Silom
Bangkok to create an authentic and exotic week long food festival featuring
the subtleties and nuances of Thai cuisine.
Chefs Ratpratoom and Muenjam are masters at creating the distinctive
character and harmony of flavour that is Thai cuisine and from September 18 to
24, The Sidewalk Restaurant will showcase the aromatic flavours and vibrant
colours of Thailand’s favourite dishes with a magnificent daily lunch and dinner
buffet service.
Located between India and China, Thailand’s food is clearly influenced by
both countries yet the food has maintained a distinct identity.
Fish is a staple of the Thai diet and fish sauce (nampla) and/or shrimp paste
(kapi) appear in nearly every recipe.
Other distinct flavours come from indigenous spices and produce, principally
coconut milk, lemon grass, tamarind, ginger, black pepper, galangal, garlic,
cilantro, basil, palm sugar, tumeric, cumin, shallots, Kaffir lime and green
onions. Chilli, an influence which did not appear until the arrival of
Portuguese traders early in the 16th century, has become a central ingredient
and some Thai food can be fiery hot.
Buffet dishes will include a selection of appetizers, soups, main courses and
desserts including Yam Ped Yang – Spicy Roasted Duck Salad, Tod Man Pla – Deep
Fried Fish Patties with Cucumber Dip, Tom Khar Gai – Chicken with Galangal Soup
in Coconut Milk, Tom Yam Goong – Spicy Prawns and Straw Mushroom Soup with Lemon
Grass, Massaman Beef Curry, Hor Mok Pla – Steamed Fish Mousse in Banana Leaves,
Pla Muek Tod Kratiam Prik Thai – Fried Squid with Garlic and Pepper and a range
of other temptations
The promotion will also feature in Sofi’s Lounge with a selection of Thai
Beers and snack food including Thai spring rolls with plum sauce, fried fish
patties with cucumber dip, steamed fish mousse in banana leaves and an
assortment of Thai desserts available during the week.
The Thai Food Festival Buffet at the Sidewalk Restaurant will be available
for lunch and dinner from September 18 to 24. Lunch is from $49 per person,
Dinner is from $55 per person.
